Starting the week off right.

Good Morning Monday

There is a lot going on over here at the Luster house.
For starters: NEW RECIPE.

Oats, Eggs, Cottage Cheese... huh?

Pancakes???!!!

I'm tellin ya, you have to try them they were really tasty and kid tested and approved!


Totally Gluten free filled with yummy protein and EASY!!!  I just stuck all the ingredients in our Magic Bullet and made these cute little baby size pancakes and my boys scarfed them down.

I found this recipe on pinterest via THIS blog and will definitely be using it again.  

1/2 C. Oats (if you have a gluten allergy make sure it says gluten free)
1/2 C. Cottage cheese
2 eggs (or 4 egg whites...)
1 tsp vanilla
1/4 tsp cinnamon (i put a bit more)
1/4 tsp nutmeg
1 Tbs Oil (I used Coconut Oil at room temp)

Blend ingredients in a blender of sorts (so many options these days), We prefer the magic bullet because its easy to clean.  But if you are making this for a crowd you would probably want to double or even triple this recipe and then of course you might want to use your larger blender.

Butter and syrup and you have a delicious and nutritious breakfast.



Also here at the Luster House we have started packing because my "Like a Good Neighbor" hard working, handsome, husband qualified for a trip to..... 
Maui, HAWAII


We, okay me, have actually been packing in my mind for weeks now but it is getting very close and all my lists and thoughts MUST come together because we are taking are sweet 1 year old boys.  We are so excited and desperate for a vacation BUT my verily routined boys have a really 
long trip ahead of them... Pray for us!

Also if you have some fabulous advice on traveling on an airplane, to a destination with a 5 hour time difference, I am open for suggestions.

Fast Healthy Quick...Delish Muffins is what I like to call them


So I am always "Pining" things but a few months ago I made a "Done" Board in order to start Trying Something New!  Often we eat whatever I throw together which usually turns out pretty good but we end up eating the same things over and over each month...Boring... 
I made two different recipes last week that are definitely going in the recipe card box. Both breakfast :)
Here's the first one, 

|| C O C O N U T  C A R R O T  A N D  Z U C H I N I  M U F F I N S ||
Ingredients
  • 2 cups shredded carrot
  • 1 cup shredded zucchini
  • 1 cup chopped peeled apple
  • 3/4 cup flaked coconut
  • 1/2 cup chopped almonds
  • 2 teaspoons grated orange peel
  • 2 cups all-purpose flour
  • 1-1/4 cups sugar (I did 1 c. Sugar 1/4 c. coconut sugar)
  • 1 tablespoon ground cinnamon
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3 eggs, lightly beaten
  • 3/4 cup canola oil (Coconut Oil)
  • 1 teaspoon vanilla extract

Directions
  • Gently toss together carrot, zucchini, apple, coconut, almonds and
  • orange peel; set aside. I shredded carrots and zucchini using my food processor crater attachment)
  • In a large bowl, combine flour, sugar, cinnamon, baking soda and
  • salt. Combine eggs, oil and vanilla; stir into dry ingredients just
  • until moistened (batter will be thick).
  • Fold in carrot mixture. Fill greased or paper-lined muffin cups
  • two-thirds full.
  • Bake at 375° for 20-22 minutes or until muffins test done. Cool

My 1 year old boys LOVED these so I stuck 2/ziplock bag and I just sit them out to thaw before I go to bed and breakfast is ready in the morning.

Happy Birthday Si and Eli

One of my favorite moments of the day is to go peek my head into the boys room when they first wake up.  I love sleepy faces!!!  I had to bring my camera in, of course, to capture the first moments of their 1st birthday.

We celebrated their actual birthday on Tuesday, March 4th and then partied with our families on Saturday.   You can't tell in these pictures but shortly after we had dinner Silas and I discovered we had a stomach bug...flu...who knows what it was... NO FUN THOUGH!

I made my boys their own picture books.  One was all the different members of our family so they can work on names and faces since we don't get to see everyone as often as we would like.  
And the other book was the places we have been in our first year.

Not sure where this boy came from... only explanation for this kid not diving head first into anything sweet (like his momma and daddy) is that at this point he was REALLY ready for a nap and started singing, shortly after this, "Its my party and I'll cry if I want to" 
He still looks super duper sweet! 


I made their ties and my sweet husband is such a good sport :)

Miss my other baby but Oh so thankful for these sweet guys.  

I have learned so much this year.  I am so thankful to get to be a mommy.  
I am overwhelmed by the massive responsibility that the Lord gives parents but thankful for those who have gone before me who I can watch and learn from.  I am sure I have already made mistakes... Someone is bound to have an overbite from a pacifier and I am sure they have already watched the suggested amount of television for a 1 year old BUT like my profile says 
"I'm not who I was when I took my first step but I'm clinging to the promise HE's not through with me yet"
Thank you Jesus for GRACE and for protecting my babies and loving them!  
I want to know you more and I want cover my boys with your love and grace.
