Football is On... Pinterest Time :)

Sunday afternoon and evening is FOOTBALL time in our house.
Which is quite unfortunate for me because I don't really like watching football.  BUT I decided to turn this time from a time to complain into a time to think about Super Bowl Party Snacks.
For those of you that don't watch football either and are completely oblivious because, like me,  you only watch HGTV and the DIY Network, the super bowl is Coming!!!!  Feb. 5, 2012  
I do love a good Football Party...okay maybe just the snacks!!
 I have the best and very affordable crowd pleasing snack.  I first had this at my sister's wedding weekend in Florida.  Her Mother in-law made them for lunch one afternoon, and then passed out the recipe.  You are going to love these!!!


Super Bowl Party Snack

Ham Rolls
(Recipe from my Twin Sister's Mother in Law)

2 Pkg. Small Buns (Hawaiian Rolls) 
8 oz Sliced Ham (maple glazed is Best)
6 oz Swiss Cheese

Slice Buns/put slice of ham & cheese on bun

1 Stick of Butter/Margarine Melted
1 1/2 T. Poppy seeds
1T. Worcheshire Sauce
1 1/2 T. Yellow Mustard
1 T. Onion Flakes

Mix and Pour over Buns
Leave uncovered until butter sets.  Cover with foil
Bake 15 min. at 350 Degrees

February... Love Month



I have been thinking about February and the idea that most people think of it as the LOVE month.  So I have decided to come up with fun/cheap special things each day for the month I can do for Anthony.   I will share them on here as I go.
1. Special Breakfast before work  2. Mail a love letter to work  3. Bring Him Lunch  4. Send Him a love note/email  5.  Clean out his Car...etc.
(If you have any fun ideas I would love to know about them.)  
I love my sweet husband so much and I know he would say one of the best things I could do for him is to be praying for him.  I have a list of things that I pray for him often but this month
I plan to pray each of these every day!

This is a Restaurant tasting Recipe

Delicious Bread Knots 





My Mom's Chicken Pasta

2 C. Chicken (Cooked in skillet with a little olive oil)
(set aside)

2 T. Butter
8 oz Mushrooms
2 Cloves garlic minced
(Brown in a Large Skillet)

Add 1 Can Chicken broth (14 oz or 1 3/4 c.)
1 T. Cooking Sherry
8 oz Pasta (1/2 wheat penne, 1/2 white noodles penne)
(Cook for 10 minutes)

Add:  1 c. of Half and Half or whole Milk
1 C. Frozen Peas
(cook 5 more mins)

Add:  1/2 c. Parmesan Cheese
1 T. Parsley
Pepper
(add more 1/2 and 1/2 if too dry)

Add Chicken back in and ENJOY!!!!!


Bread Knots


Pre-Heat Oven 400 Degrees
1 Can of Flaky Biscuits
(Cut into 1/3, rolled into dough ropes, and tie into a knot)
 Bake 8-10 Min.

Combine:
1/2 Stick Melted butter
1 Tsp. Garlic Powder
1 Tsp. dried oregano
1 Tsp. Dry parsley

Brush Mixture on Baked Bread and Sprinkle with Parmesan Cheese

How is it Already Friday!!!

Anthony and I have been on a "cleanse" for the last 3 weeks and today marks the first day of eating normal.  The cleanse consisted of fruits, vegetables, fish, chicken, brown rice, beans and the Standard Process Cleanse Supplements.  I am happy to announce that my jeans fit better!!!  
It is amazing to me how much I think about BREAD, CHOCOLATE, and CHEESE!
I am on the look out for new and healthy snacks, while we stick close to our new healthy way of eating.  
   I found a very yummy and quite healthy recipe that I wanted to share 
via Pinterest via Smashed Peas and Carrots 
I made a few minor adjustments to suit what I already had in my pantry :) 


No Bake Energy Bites
(Power Balls: is what I think I will call them)

1 Cup Oatmeal
1 Cup Coconut Flakes
1/2 Cup Almond meal
 (original recipe called for ground flax seed)
1/3 Cup chopped dark chocolate
(original recipe called for mini chocolate chips)
1/3 Cup Honey
1/2 Peanut Butter
1/2 Tsp Vanilla

Mix everything together, Chill in the refrigerator, Roll into balls and enjoy!
Keep in Refrigerator for up to 1 week.

My Friend Kelly introduced me to these a couple of years ago!!

Oreo Balls (Truffles)


1 Package of Double Stuffed Oreos
1 Package of Cream Cheese
1 Package of Chocolate Chips
(White Chocolate for drizzle to beautify)

In a food processor; finely crunch up the whole package of Oreos.
Add the cream cheese to the cookie crumbs until blended well.
Make balls with the dough and place on a cookie sheet with parchment paper.
Place them in the Fridge for 30 mins
Melt Chocolate: Double Boiler or microwave(careful not to burn)
*Microwave: 1min, 1min, repeat 10-15 sec. until melted
Dip Balls in the Melted Chocolate Covering completely.
Place back in the Fridge for 30 more mins. 
Add White Chocolate Drizzle
Store in Fridge and ENJOY!!! 







Lovely Monday 

I really like Mondays!!! I am sure that it is because I don't have to battle the traffic and head to work after a relaxing weekend... which is making me very thankful even as I do the laundry.
Monday's for me are fairly typical...
Wake Up
Make a Smoothie for Anthony and I 
Clean the Kitchen
Start the Laundry
Make our Bed 
Make a cup of coffee
Check my calendar making sure everything that is planned for this week is at least slightly in my brain!!!
And my Favorite:  Sit and Read a Bit with my coffee.

My mom gave me this really great devotional for Christmas that I am loving!!! (Jesus Calling, by Sarah Young) The author, using scripture, has written daily readings as if Jesus himself were talking to me!!  It's great because the author is careful in keeping with the Character of Christ and all the promises he has already given us.   
I have also decide to read Pilgrims Progress again, or start it and fully finish it!!
For some reason I have been thinking about that book a lot lately.  

For those that are like me and have a hard time having a Quiet time because your mind is awake and going a million miles I have a simple trick that my dear friend Mrs. Kay told me.  
It is Simple YET so profound.  

When you sit and read always have a note pad and or your calendar near so that you can quickly jot something down without completely wrecking your time.  Its inevitable that I will constantly be thinking of all I need to get done and how I am definitely going to forget something.  If something comes to mind write it down and move on.  
     


Later today(Maybe tomorrow) I am going to post a dessert I made this weekend that is ALWAYS a crowd pleaser and only has 3 ingredients!!!  Super Easy!

This is my first blog post!
